Lentil Salad with Zesty and 'Cheesy' Ahi Cider dressing
Spring is well upon us here in New Zealand and the weather is slowly starting to get a bit warmer which we are very excited about as are the pups who have been sunbathing most mornings on the deck!
I whipped this salad up yesterday for a quick and tasty lunch using leftover roast veggies and it was ready to enjoy in less than 15 minutes.
I'm a huge lover of salad dressings (and sauces!) as they can really add a big punch of flavour to your leafy greens and this one was no exception. It sure hit the spot!
The 'cheesy' flavour comes from nutritional yeast which is described as having a nutty, cheesy and savoury flavour. You can find nutritional yeast at your local health food store or the healthy food aisle in most supermarkets and it comes in the form of powder or flakes. Either one is perfect! Just don't get it confused with brewers yeast or any other yeasts for that matter as they have a bitter flavour.
So without further ado, lets get cooking (or should I say making?)....
Zesty and 'Cheesy' Lentil Salad (Serves 2)
Salad Ingredients + Roast Veggies
3 handfuls Iceberg Lettuce (chopped or feel free to use any mix of salad greens)
1 Tomato (chopped)
1/4 Cucumber (sliced thinly in half moons)
1/4 Capsicum (chopped)
1 handful Red Cabbage (thinly sliced)
1/2 Carrot (grated)
1 Avocado (diced)
1 can Lentils (rinsed and drained)
2 cups of Roasted veggies (leftover from the night before is perfect!)
Mix salad ingredients together and pop on 2 plates before adding roast veggies on the side.
Salad dressing Ingredients
3 Tablespoons Ahi Cider
3 Tablespoons Nutritional Yeast
1 Tablespoon Wholegrain Mustard (or mustard of choice)
1/2 Lemon squeezed for juice
2-3 decent glugs of Olive Oil (depending on the consistency you prefer)
Mix dressing ingredients together with a fork or whisk. Drizzle dressing over the salad or serve in a little bowl for dipping roast veggies into.
