Crispy falafel salad with a tangy and creamy 2 minute dressing

It's no big secret that we are big time lovers of falafel. Even more so when they are super crunchy and popped on a fresh crispy salad. YUM!

It's also no secret that we love sauces and dressings. Unfortunately many of these are loaded with hidden sugars, refined oils, artificial flavouring and preservatives which can add a nasty toxic blow to your otherwise healthy meal. No thanks!

So when I whipped up this tangy and creamy dressing yesterday I instantly knew it was too simple and too good not to share with you. It really adds an extra flavour punch which not only tastes good but is actually good for you too - Now that's more like it!

Crispy falafel salad with a tangy and creamy 2 minute dressing (Serves 2)

Salad Ingredients
2 big handfuls of Spinach (or leafy greens of choice)
1 Carrot (grated)
1 Avocado (diced)
1 Tomato (sliced)
1/2 yellow Capsicum (sliced)
12 Falafel balls cut in half (oven baked or fried in a pan)

Mix Salad ingredients together and divide onto 2 plates then top with the falafel. 

Salad Dressing Ingredients
2 Tablespoons of extra virgin olive oil
2 Tablespoons of nutritional yeast (optional)
2 Tablespoon of Tahini
2 Tablespoon of Ahi Cider tonic (I used Original but any of the tonics would be fab!)

Mix in a small bowl with a fork and drizzle over salad. Voilà!
